I always have leftover cooked pasta in the fridge and my favorite quick food is pasta with tomato sauce. Except that today, I didn’t have the prepared jar of spaghetti sauce to satisfy my cravings! I was in dire need of a carb loading session since I am just days away from my residency interview (eek!). Not to worry, luckily I found some miscellaneous cans of diced tomatoes and tomato paste in my cupboards.
Here’s the quick how-to on making a simple spaghetti sauce:
- Pan fry one diced sweet yellow onion with a pinch of garlic salt until soft and golden
- Toss onion into pot with one can of diced tomatoes (with Italian seasoning), one small can tomato paste and 1 tsp sugar.
- Top with dried basil/oregano
Cook until warmed through and pour over cooked pasta, and that’s it! You can sprinkle some parmesan cheese on top or throw in a meatball if you got it. What’s your favorite sauce recipe?
